The wine shows elegant smokiness from the barrels, supporting the
citrus fruit in a full-bodied, creamy blend, with fine, fresh acidity and a
classy finish.
 
Grape Varieties: Síria.
 
Vinification: After pressing the grapes, the must fermented in 500 liter
barrels, new and used, made of French oak.
 
Aging: There followed a year of aging on total fermentation lees.
 
Paring: Baked or grilled fatty fish, roasted cod, grilled seafood. Pasta dishes
(mushroom or asparagus risotto, pasta with seafood, vegetable lasagna).
Vegetarian dishes (grilled or gratin vegetables and savory pies). Soft or
semi-cured cheeses and starters with dried fruits, such as bruschetta with
figs, honey and nuts).
