Winemaking: Manual harvesting in boxes. A part of the grapes, about 20%, is picked lately with the main objective to ensure to the grapes a higher sugary and aromatic concentration. The manual harvest is followed by a soft destemming and crushing. The fermentation, which takes place after an opportune static clarification of the musts, is conducted at a controlled temperature (about 16°C) for a month. Once the fermentation is ended, the wine obtained by overripe grapes is then refined for 12 months in French oak barrels of second and third passage. The resting part of the wine goes through refining in steel. The assembly is then executed in tank. The final step is the bottling.
Organoleptic characteristics: A deep yellow wine with straw nuances. The typical nose hints of white flowers immediately let individuate the Malvasia vineyard, that here has a vivid and fresh expression, with tropical and white pulp fruits recalls. Tasting it, this wine offers a good acidity combined with a typical minerality, which makes this wine particular also for its sure taste length. The sugary residue is synonym of a pleasant drinking.
