Traditional vinification after harvesting of the healthiest grapes, destemming and crushing. Each grape variety is treated individually. Fermentation and maceration at controlled temperatures. Maceration of around one week for the Merlot and two weeks for the Cabernet. The two varieties are blended before bottling, to complement the Merlot’s delicious fruit with the finesse and complexity of the Cabernet Sauvignon.
Blend: Cabernet Sauvignon & Merlot. (% of blend not given at time of print)
Apperance: Deep ruby red colour, with a raspberry fringe.
Nose: Open nose of raspberries and strawberries. Airing reveals blackberry and white pepper, as well as a floral touch of peony.
Palate: The fresh fruit (plum, raspberry and blackcurrant) balances a more mature
note of mocha.
