The grapes are pressed using a pneumaticpress. The musts of the resultant juice are left to settle under cold conditions(8°C). Alcoholic fermentation takes place in temperature controlled vats(18°C), started off by the addition of yeasts which are specially selected for their ability to bring out the aromas of the Chardonnay and Colombard grapes.
Blend: Colombard Chardonnay. (% of blend not given at time of print)
Appearance: Pale and brilliant yellow-green colour.
Nose: Fine and expressive nose, evoking lemony white fruits and ripe kiwi. The agitation delivers an exotic note of cinnamon apple.
Palate: The lemony freshness of the palate melts into a complex volume, both mineral, exotic zesty. Long finish of lemon, pear and green mango.
